I don't see a lot of demos being uploaded here, ch-tv or ql-tv. Is it just because people are using streaming games more, or is there a site I'm unaware of?

I would say the reason is livestreams, VOD's and demos being hosted elsewhere (tournament website).

Tournament admins/organizers are just not paying enough attention to collecting demos from players and often forget or even not acknowledge at all that this is one of their primary responsibility.
